Shrimp with Herby White Beans and Tomatoes

This crowd-pleaser takes just 20 minutes to pull together. It’s the one-pot meal that’s herby, sweet, and garlicky all at the same time.

INGREDIENTS:

  • 3 tablespoons olive oil, divided
  • 1 medium shallot, thinly sliced
  • 1 (14.5-ounce) can diced tomatoes
  • 1/2 teaspoon (or more) kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1 (15-ounce) can white beans, rinsed, drained
  • 1/4 cup Roasted Garlic Herb Sauce or high-quality pesto, plus more for serving
  • 8 ounces shrimp, peeled, deveined (about 16 medium)
  • Thick slices of crusty toasted bread (for serving)

One-Pot Pasta Primavera with Shrimp

This is the super-fast version of the classic veggie and pasta combo. The clever part is that it calls for just the right amount of water that magically cooks down to create a silky sauce, no draining necessary.

ACTIVE TIME: 22 minutes

TOTAL TIME: 22 minutes

INGREDIENTS:

  • 12 ounces short pasta, such as penne or fusilli
  • 4 garlic cloves, thinly sliced
  • 2 1/2 teaspoons (or more) kosher salt
  • 3/4 teaspoon (or more) freshly ground black pepper
  • 1 (10-ounce) bag frozen broccoli florets
  • 6 ounces green beans, preferably haricots verts, trimmed
  • 8 ounces large shrimp, peeled, deveined, tails left on
  • 1 pint cherry tomatoes, sliced in half
  • 1 cup frozen green peas
  • 3 tablespoons unsalted butter
  • 1 teaspoon finely grated lemon zest
  • 3/4 cup finely grated Parmesan, plus more for serving
  • 1/4 cup coarsely chopped basil
  • Red pepper flakes (for serving; optional)

Fish Packets with Snap Peas, Tomatoes, and Herb Butter

Let your crew build-their-own fish packets and choose which items they want to include. Moist and delicious every time, the herb butter infuses the fish and vegetables with rich flavor, while the tomatoes release their juices to create a savory sauce.

INGREDIENTS:

  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 2 tablespoons finely chopped tender herbs (such as cilantro, chives, and/or parsley)
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, plus more
  • 1 pound sugar snap peas, trimmed
  • 1 pint cherry tomatoes (about 2 1/2 cups), quartered
  • 2 large garlic cloves, thinly sliced
  • 4 (1/2″-thick) skinless flounder or tilapia fillets (about 6 ounces each)
  • 1/4 cup coarsely chopped basil
